Ball canning jars have set the standard for decades. Home preservers have used them for everything from apple cider jelly to pickled okra to gourmet salsas.

A good quality canning jar can be used over and over again as long as you don't break it or chip the sealing edge. I have used mayonnaise and jelly jars from the store, but I've had more breakage with those because they are slightly thinner glass and weren't designed for home canning. I can attest to the dismay at the loss of perfectly good food due to breakage of the jars in the pressure canner.

If you garden, or if you buy food in volume at sale prices, home canning, freezing, or drying make perfectly good sense. Whether you use quarts or pints is up to you. I use both sizes, and the Ball Mason Canning Jars are perfect for all. (Be careful freezing, because overfilling can cause breakage even of the best jars.)

Having said that, I do not recommend purchasing jars online unless the price is extremely low or the shipping is free, because shipping costs can be horrendous. Unless you have no alternative, buy them locally. (There may be some exceptions: If you are shopping online for a company that has a local outlet, they may ship to that outlet for free and you can pick them up yourself.)

These metal SNAP lids and screw bands for mason jars seal home canned foods airtight. After heat processing and upon cooling, a vacuum is formed which seals the lids onto the jars. The lids are laquered to prevent rust and have an interior enamel coating to resist natural food acidity.
Screw bands can be reused, but SNAP lids are designed for one-time use only.

For best results, fill hot jar with prepared recipes, leaving recommended headspace. Wipe jar rim and threads with a clean, damp cloth removing any stickiness. Center hot SNAP lid on jar. Apply screw band just until fingertip tight; do not overtighten. After processing, remove jars from canner and set upright on a towel in a draft-free place. Do not retighten screw bands or check for seal while jars are hot. Cool processed jars upright, undisturbed for 24 hours. After 24 hours, check seals. Sealed lids curve downward and do not move when pressed. (Any unsealed jars should be reprocessed or refrigerated.) For all sealed jars, remove screw bands; wipe and dry bands and jars. The very first time I saw these I grabbed several boxes of them. I make sauerkraut IN canning jars and these lids are so helpful. Since I got these lids I keep various sizes of canning jars in my kitchen cupboards and use them to store things in the refrigerator. They have a nice sealling system in them that allows you to store things like cut up onion and garlic and not have to deal with odors. I use them on the "canning jar" mugs because it keeps insects (like the annual influx on lady beetles) out of coffee, etc. I also like these to use on canned food after the jars have been started. Soooo convenient!!!

Best thing to happen to canning jars in years! I take my rings off my jars when I store them. These lids are great after opening a jar particularly of jam or fruit to store in the refrigerator. I also use 1/2 gallon jars for fresh raw milk and these lids are great. Only 4 stars though as it is not a waterproof seal (they can leak if tipped over) but definitely a good thing to keep on hand.
